This recipe I found in BHG gets 2 thumbs up from us!
What a great side dish for all things grilled!
And just in time for summer!
Summer Vegetable Potato Salad
1 lb small red new potatoes, sliced
1 lb small red new potatoes, sliced
2 fresh ears of corn, cooked
4 Roma tomatoes, sliced
1/4 cup fresh basil leaves, torn
1/4 cup olive oil
3 tbs balsamic vinegar
1 tbs finely chopped shallot or red onion
1/2 tsp Dijon-style mustard
1/4 tsp sugar
1/2 cup crumbed feta cheese
Fresh basil leaves for garnish
Cook potatoes, covered, in boiling salted water
for 5 min. or until JUST tender. Drain and cool.
Cut corn from cob. On large serving platter,
arrange potatoes and tomatoes.
Sprinkle with corn and 1/4 cup torn basil.
For dressing, thoroughly combine
oil, vinegar, shallot, mustard, sugar,
and S & P to taste. Pour over
potato mixture. Sprinkle salad
with feta cheese and basil leaves.
Makes 8 to 10 servings.
